In their kitchen they only use products of the highest quality. Products are bought on time and according to market possibilities so that our dishes always have the quality, freshness and flavor that natural products offer. Their quality requirement is very high because we want to offer our clients the highest gastronomic experience. Even in those products where it is possible, they only supply organic products that further reinforces our desire to offer the most excellent traditional Basque cuisine.

A trajectory of more than 40 years in which we have become a benchmark for typical Basque food. In July 1980 the ÓRDAGO restaurant was opened. Xabier Rodríguez and Elena Amesti started in a small place where there were barely six tables. Órdago is a Basque expression that means: “there it is”, which is a challenge to the one who hears it. It is also an expression of mus that proposes the maximum bet. With this intention we begin this adventure.

The menu is very reduced, but the high quality of the cuisine made it necessary to reserve a table weeks in advance to taste the exquisite dishes. The greats of the house: Tolosa beans, seasonal fish, old cow chop and fried milk. There was no gourmet in Madrid who did not know us. Years later, the restaurant was expanded to satisfy more customers and at the end of the 90s, the second generation took over the restaurant.
